This 100% Cabernet Sauvignon was aged in combination of French and American Oak barrels for over 18 months prior to blending and bottling in April of 2009. Classic aromas of mint and dark chocolate are married with the toasty oak flavors and soft tannins from long barrel aging. This is a Cabernet Sauvignon made to lay down for many years to come but is also very enjoyable in its youth. The grapes were hand picked, 'bin fermented' and punched down daily until fermentation completed after 8 days. After pressing the grapes the wine was gently racked to barrels for aging. 125 cases were produced. PLEASE NOTE: We only ship to California addresses at this time.
